I have checked several scientific studies on the sugar breakdown of honey, both in the US and Europe. Most studies doing original measurement have been very consistent.
Honey is about 82% carboyhydrates. Average sugar content of honey, plus or minus 0.2% on any given category:
- Fructose (d-fructose) 38.2% in some buy generic ambien sources, 38.5% in others. Compare to one study on European honeys with 28-41%
- Dextrose (d-glucose) 31.0%
- Sucrose (table sugar) 1.5%
- Maltose 7.2%
- Other higher carbohydrates 4.2%
The average pH of honey is 3.9%, which is acidic. Commercial honey in the US generally consists of 17% water.
